One thing is that your mode switch has to be set to center or down (positions where you have control of tilt with your stick). With the switch up, pan compensation does not get activated. You also need to set the PID gains to get really good results.

We use lots of carbon without a problem. It's very likely proximity to battery wires or ESCs as AL suggested. Twisting the wires and moving them away from the HoverflyGPS will help. Here's one of mine flying nicely.

I highly recommend that you get a Castle BEC and set it to 9v. Power the Hoverfly with the Castle BEC. This way you can use whatever voltage battery.

If you have a bad pot, you should replace it. I would talk to the camera mount manufacturer about getting a new pot.
