recomendations best rc tx transmitters for use with gimbals

I would like to get a 3 axis gimbal and control it with a knob as opposed to a switch but I dont see a ton of options out there.

What are recommended radio controllers for use with a gimbal ?

what are people assigning to control pitch and yaw on 3 axis - just a switch or a dial?
