You check servo output signals with a digital servo programmer like the Hitec HFP series. Place in line between the servo and the the FC and it will show on its screen the control signal being generated and sent out. Perhaps Quadcopters could do this for you.

Any HDMI to composite converter will create a significant time lag between what it sees and what you see. Flying FPV would be impossible. This due to the time it takes to decode the HDMI digital signal to an analog one.

Are you sure the connector for the Gentled/servo are being put in the correct orientation, not 180 degrees out ?

If you want to know the current draw of the LEDS, why not just measure it with a multimeter set to DC amps or milliamps ?

Instead of using the Gentled, why not set camera to continuous shooting mode and rig a small servo with an arm that can depress the shutter release button. This way you will get maximum shot rate.
