Questions about choosing motors and props.

So I've been looking into building my first quad after learning to flying on a Syma X1. I think I've figured out pretty much everything other than the motors and props I will be using (I'll list current BOM bellow).

I've followed the (AC weight x2) / 4 rule to figure out the thrust I'll require to hover @ 50% throttle per motor which worked out to be 1360g, so the thrust per motor I require is 678g, now the motors I've been looking at are SunnySky V2216 800kV motors which with a 1047 prop @ 11v produces 960g of thrust which is way more than adequate for my needs, now my question: is it ok to go with a much larger motor than required or should I try and keep it to my required thrust of 678g, or could I just keep that motor and use a smaller prop for now and when I need to carry more weight later on change to a larger prop? And I'll mention I would like to add some FPV gear to this later on.

Current BOM
If anyone has any recommendations as well that would be great.
