None of my content will need to be 4K BUT I just realized the potential of being able to pan, tilt and zoom in post while still retaining an HD clip.

Good stuff. Right now I see 4K as being solely useful for editing. The problem is getting good enough 4K to really zoom / track in post and end up with great 1080p. The GH4, for example, records 4K at 100Mbit/sec internally. That's just barely good enough for a heavy edit that uses 1080p portions of the frame. The best I've personally seen is when I combine my GH4 with an Atomos Shogun (on the ground). That produces a (huge) file that really stands up to editing. At the other extreme is the 4K from a GoPro or DJI Inspire. Next to useless in my view for anything but very light editing and downconversion to 1080p.

Sure, you can film 4K on a GH4, record internally, and then output 720p. Don't get me wrong -- the GH4's internally recorded 4K is great. But, unless you really plan on pan/zoom edits the internal 1080p is better for most purposes. You get double the bit rate at 1080p and that gives you eight times as much data per pixel vs. 4K.
