Weight and strength, I believe - non-electrics being more robust to withstand the rigours of high-speed, high-vibration rotation.

Nothing to stop you using non-electrics, except that (in theory) they won't perform as well due to their higher weight (and hence higher rotational inertia).

For instance, non electric wood prop weights around 26 grams. APC Thin Electric 13x6.5 prop weights over 33 grams. This means, in terms of weight and higher rotational inertia, APC is worse than non-electric wood prop? So, I think they're worth to try.
 

I think efficiency is also a factor. From the tests I have run, the current draw is higher with a non-electric prop.
