The nitro one looks a little heavy but it was only the second flight. The electric one looks solid!

That's a cool idea. Figures it would be a CY project.
But cool factor aside, why would you want to do that? That just introduces a huge amount of complication just to be able to go inverted, do Tic-Toc's, and piro-flips.
You gain with only having 1 ESC (for electric) but lose by adding four over-sized tail rotor systems, belt drives, and associated linkages and servos. A whole lot more mechanical failure points and maintenance needs.
 




With variable pitch, the FC can react to the wind faster, because its not speeding up and slowing down motors. Which is why SRH are more stable in wind over multis.

SRH are not more stable in wind until you get into the larger sizes. Again mainly due to the increase in mass.
And even then, SRH are inherently unstable regardless of wind. It's the FC that makes it stable. A flybarless heli is considerably more stable then a flybarred heli because of the FC and the servos that are used.

The reaction speed is determined by the ESCs on a normal MR and by the Servos on the variable pitch. Plus, the variable pitch systems motor rpm will change in flight due to loading. A governor will attempt to maintain a constant speed, but anyone who has flown SRH knows that even the best governor/motor combo will fluctuate as much as a couple hundred RPM depending on load.
