looking for info on ESC's and Motors to upgrade my xaircraft frame to handle <=3000g

I am hear to listen and be educated, overall I would like redundancy, keeping it as a octo, but I am not totally against going down to a quad, I just don't know enough about motors and esc readabilities, so if one fails in flight I would like to have a safety cushion. I thought of going with the 4 AVROTO 2814 motors with Maytech Harrier-Suprem 30 Amp Brushless ESC With 5V/3A BE, however those are just thoughts
