F550 w NAZA w Avroto Motor surging / dying with new ESC - help!!

Hi there. I've recently converted my F550 for heavy lifting by putting arm extensions on and installing Avroto m2814-11s motors.

I took her for a test flight and she started ascending randomly very fast about 10 - 20 feet at a time. After some digging in forums it seemed most likely that a bad ESC was at fault. I am using stock DJI 30A.

I bought some more ESC's and unplugged all of them. I then plugged in one at a time and turned the motor on to see which was the defective one. It seems I have 2. When running these motors do not respond to the thrust input as they shout. As you increase thrust there is no response, then suddenly it kicks in. You turn it down a little and it goes right back down. If you level out the control the motor continues to lower thrust until almost nothing. It's not right at all.

The one I worked on last night is giving me grief. I soldered on a new ESC and then turned the motor on and nothing changed. It was still the same. Completely frustrated I soldered another new ESC on and still the same!

Could it be the motor or am I not installing the ESC correctly? I did not link it up to the Naza software for calibration as I did not think it would need it.

Please help! I have a film shoot this weekend I need to be up and running for!!
