Advice/Sanity check requested

I have a Tarot 680pro with SS3508-700kv, 12-3.8 CF props, HK F30a, Pixhawk controller and 4s 5000mah. Flies great. My problem is I also have a Sony NEX-6 camera and bought a DYS 3-axis gimbal. When I put the gimbal, camera and video TX on she takes about 70% to hover. I have the extra motors & ESCs to move up to OCTO but not sure what to get. Would the extra 2 motors help overcome the weight issue? Been really eyeballing the Tarot T1000 Ironman and quadframe.com Octo frames. Lots of info out there on the T1000 but not finding a lot of info on the quadframe.us stuff. Looking at either the medium octo with 21.5mm arms or the pro with 25mm arms. Hoping maybe someone out there has one of the quadframe.us octo frames that could way in on it. They use fiberglass plates vice carbon fiber for center plates.

Do I really need the 25mm arms or do you think the medium weight (21.5mm arms) would be a better choice given the parts I already have?

Mainly used for hobby aerial photography.
