I don't think the 1 Pilot guidance in the manual is helpful at all (see below), i.e. suggesting channels 1-8 for the Zenmuse when not all that lot is needed for a one man...
No just Tilt, really just like the Z15 H3-3D. So in orientation lock I think it is on the Z15 - Gh4. You are thinking I'm trying to do something far more complex!!!

Ben, sorry I wasn't trying to confuse but a shutter angle of 180 is the aim. This translates to a shutter speed of 1/50 sec if you are at 25fps. Your shutter speed of 200 is why the rotating wind turbines look a bit choppy. If you don't like motion blur then that's absolutely fine.
