Hi guys I am just setting up a new heavy lift octo, capable of lifting the red epic, fs700, canon c300 etc. I have 4 brand new 5s 8000mah batteries so would prefer to stick them them if I can. Here is my 'set up' on ecalc, what are your thoughts/ suggestions? Thanks very much

Just use a camera quick release plate. It acts like a slider and you can lock the plate in place at the sweet spot. Then to swap cameras or remove, simply unlock it and slide it out. This is one example http://www.dvcreators.net/bogen-577-quick-release-plate/

I am pretty sure it is the levels that are off. It is mentioned somewhere way back in this forum! If it rolls while panning then the tilt axis level hasn't been accurate. If it constantly rolls in one direction then try offsetting the level of the tilt axis and see if it gets better or worse...

Make sure the tilt belt is tight, I'm not sure what firmware you aren't using but 1.2.2 or later then upgrade. Keep integral gains low, they can cause jitter if too high.
